Instructions

Remove from heat and carefully whisk in 2 tablespoons of butter, followed by 1 cup of heavy cream. Stir in 0.25 teaspoon of sea salt until smooth. Set aside to cool.
  • Make the Ice Cream Base: In a mixing bowl, whisk together 6 egg yolks with 0.75 cup of granulated sugar until pale and thickened. In a saucepan, combine 2 cups of whole milk and the caramel mixture, heating until just simmering. Gradually whisk the hot caramel milk into the egg mixture, then return everything to the saucepan.
