Prepare the Caramel: In a saucepan over medium heat, combine 1 cup of granulated sugar and 0.5 cup of water. Stir until the sugar dissolves, then stop stirring and let it simmer until the mixture turns a deep amber color. Remove from heat and carefully whisk in 2 tablespoons of butter, followed by 1 cup of heavy cream. Stir in 0.25 teaspoon of sea salt until smooth. Set aside to cool.
Make the Ice Cream Base: In a mixing bowl, whisk together 6 egg yolks with 0.75 cup of granulated sugar until pale and thickened. In a saucepan, combine 2 cups of whole milk and the caramel mixture, heating until just simmering. Gradually whisk the hot caramel milk into the egg mixture, then return everything to the saucepan.
Cook the Mixture: Cook over medium heat until the mixture thickens and coats the back of a spoon, about 5-7 minutes. Do not let it boil. Strain the mixture through a fine sieve into a clean bowl and let it cool to room temperature.
