Crust

  • 1 ¼ cups all-purpose flour preferably unbleached
  • ½ cup cold unsalted butter cut into small cubes
  • ¼ cup granulated sugar divided
  • ¼ tsp salt
  • 3 tbsp cold water more if needed

Filling

  • 2 cups mixed fresh berries such as strawberries, blueberries, and raspberries
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice freshly squeezed
  • 1 tbsp lemon zest finely grated
  • 1 large egg beaten for egg wash
  • 1 tbsp turbinado sugar for sprinkling

Instructions
 

  • Prepare the crust by combining 1 1/4 cups of flour, 1/4 cup of sugar, and 1/4 tsp of salt in a mixing bowl. Using a pastry cutter or your fingers, work the cold butter into the flour mixture until it resembles coarse sand.
  • Gradually add the cold water, one tablespoon at a time, mixing gently until the dough comes together. Wrap in plastic wrap and chill in the refrigerator for at least 30 minutes.
  • Preheat the oven to 200°C (400°F). Roll out the chilled dough on a floured surface to form a rough circle, about 12 inches in diameter.
  • Mix the berries with cornstarch, lemon juice, and lemon zest in a bowl. Place the mixture in the center of the dough, leaving a 2-inch border.

Notes
