Elegant French Raspberry Almond Cream Tart Delight

by Lori Wilson

The Raspberry Almond Cream Tart is a refined and elegant dessert that beautifully exemplifies the harmony of contrasting textures and flavors, drawing deeply from the traditions of classic French patisserie. At its heart, this tart is a celebration of balance: the tangy brightness of fresh raspberries is grounded by the rich, buttery flavors of almond cream, all held together in a delicately crisp tart shell. Each component adds complexity and contributes to a luxurious dessert that feels as at home at a dinner party as it does as a treat on a calm weekend afternoon.

The tart begins with a pâte sucrée-style crust—a French sweet pastry dough that offers a tender yet sturdy base for the creamy filling and fruit. Unlike its American counterparts, which often lean toward flaky pie doughs, a tart shell like this one is more shortbread-like, subtly sweet with a melt-in-your-mouth texture. The dough is made simply, with flour, sugar, butter, and egg yolk. The inclusion of egg yolk adds richness, and the chilled butter ensures the crust maintains its crisp structure after baking.

The almond cream, or crème d’amande, is where much of the tart’s character lies. A staple in many French pastries such as frangipane tarts and galettes, almond cream is prized for its velvety texture and deep, nutty aroma. In this tart, it’s made with softened butter, sugar, almond flour, a whole egg, and just a touch of almond extract to amplify the natural nuttiness of the almonds. As it bakes, the cream puffs slightly, forming a moist, cake-like layer that delicately envelops the fruit.

Raspberries are a natural pairing with almonds—their bright, slightly tart flavor contrasts beautifully with the richness of the cream. Their vibrant red hue provides visual appeal, making the finished tart as lovely to look at as it is to eat. While fresh raspberries are ideal, the recipe easily adapts to frozen ones, allowing the tart to be enjoyed even out of season.

The inspiration for this tart stems from the timeless dessert traditions of France, particularly the rustic yet refined creations you might spot in the window of a Parisian patisserie or on the table of a countryside farmhouse. Combining the artful aesthetics of French baking with accessible techniques and ingredients, the Raspberry Almond Cream Tart captures the essence of European elegance while remaining achievable for home bakers.

In terms of serving, a light dusting of powdered sugar completes the presentation, adding a touch of sweetness and sophistication. Served slightly warm or at room temperature, it pairs wonderfully with a pot of darjeeling tea or a delicate dessert wine like Muscat or Sauternes.

Whether you’re looking to impress guests or simply indulge in a quiet, exquisite dessert, the Raspberry Almond Cream Tart satisfies both the desire for comfort and the craving for something extraordinary. It’s a dish that allows simple ingredients to shine through careful preparation, blending tradition with irresistible flavor.

Equipment

  • 9-inch tart pan with removable bottom
  • Food Processor
  • Mixing Bowls
  • Whisk
  • Rolling pin
  • Baking sheet

Ingredients

For the Tart Crust:

  • 1 ¼ cups all-purpose flour preferably unbleached
  • ¼ cup granulated sugar
  • ½ cup unsalted butter cold, cut into cubes
  • 1 large egg yolk

For the Almond Cream:

  • ¼ cup unsalted butter softened
  • ¼ cup granulated sugar
  • ½ cup almond flour finely ground
  • 1 large egg
  • ¼ teaspoon almond extract

For the Topping:

  • 1 cup fresh raspberries preferably organic
  • 1 tablespoon powdered sugar for dusting

Instructions

  • Make the Tart Crust: In a food processor, combine the flour and sugar. Add the cold butter cubes and pulse until the mixture resembles coarse crumbs. Add the egg yolk and pulse until the dough just comes together. Wrap the dough in plastic wrap and chill for at least 30 minutes.
  • Roll and Pre-bake the Crust: Preheat the oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface to fit your tart pan. Transfer it to the pan, pressing it into the sides. Trim any excess dough. Line with parchment and fill with pie weights. Blind bake for 15 minutes.
  • Prepare Almond Cream: In a mixing bowl, cream the softened butter and sugar until light and fluffy. Mix in the almond flour, followed by the egg and almond extract, until the mixture is smooth.
  • Assemble the Tart: Spread the almond cream evenly over the pre-baked crust. Arrange the raspberries on top, pressing them slightly into the cream.
  • Bake the Tart: Return the tart to the oven and bake for an additional 20-25 minutes, or until the almond cream is set and lightly golden.
  • Cool and Serve: Let the tart cool in the pan for at least 15 minutes before removing the sides of the tart pan. Dust with powdered sugar before serving.

Notes

  • For a gluten-free version, use gluten-free flour for the crust.
  • If raspberries are out of season, frozen raspberries can be used, but let them thaw and drain excess liquid before placing on the almond cream.
