A berry galette is a free-form pastry filled with a mix of fresh seasonal berries tossed in a little sugar, all folded into a flaky, buttery crust without the need for a pie dish. It bakes in about 35–40 minutes and can be served warm or at room temperature.

Instructions
Prepare the crust by combining 1 1/4 cups of flour, 1/4 cup of sugar, and 1/4 tsp of salt in a mixing bowl. Using a pastry cutter or your fingers, work the cold butter into the flour mixture until it resembles coarse sand.
Gradually add the cold water, one tablespoon at a time, mixing gently until the dough comes together. Wrap in plastic wrap and chill in the refrigerator for at least 30 minutes.
Preheat the oven to 200°C (400°F). Roll out the chilled dough on a floured surface to form a rough circle, about 12 inches in diameter.
Mix the berries with cornstarch, lemon juice, and lemon zest in a bowl. Place the mixture in the center of the dough, leaving a 2-inch border.
Fold the edges of the dough over the berries, pleating as needed. Brush the dough with the beaten egg and sprinkle with turbinado sugar.
Bake in the preheated oven for 30 minutes or until the crust is golden and the berries are bubbly.
Let cool slightly before slicing and serving.

For a lactose-free version, substitute the butter with a plant-based alternative. You can also experiment with different berries depending on what's in season.
