This is a meringue sheet baked flat, filled with whipped cream and fresh raspberries, then rolled into a log. It looks impressive on a table and slices cleanly into eight portions. The pistachio-flecked meringue and bright raspberries do most of the visual work for you — no decoration required.

The short version of why this works

Two things matter here. First, the cornstarch folded into the meringue keeps the inside soft and pliable instead of drying all the way through — without it, the sheet would crack the moment you tried to roll it. Second, timing the roll correctly makes the difference between a clean spiral and a crumbled mess: the meringue needs to come off the baking sheet while it is still slightly warm, not fully cooled. Once it cools completely it stiffens and loses the flexibility you need. Work quickly after it comes out of the oven, and the roll almost guides itself.

About the ingredients

  • Egg whites: Room temperature egg whites whip to a higher volume than cold ones. If you forgot to take them out early, set the eggs (uncracked) in a bowl of warm water for five minutes.
  • Superfine sugar: The recipe calls for superfine, and it is worth seeking out. Coarser granulated sugar dissolves more slowly and can leave a slightly grainy meringue. In a pinch, pulse regular granulated sugar in a food processor for 30 seconds.
  • Pistachios: Buy them unsalted and raw or already roasted — either works. Avoid the pre-shelled ones sold in snack bags, which are often heavily salted. Chop them finely enough that they fold in without deflating the meringue.
  • Heavy cream: It must be cold. Warm cream will not whip properly. Keep it in the fridge until the moment you need it.

If something goes sideways

  • The meringue weeps or looks wet on the surface after baking: This is usually caused by undissolved sugar. Next time, add the sugar more slowly and check that it has fully dissolved by rubbing a small amount of meringue between your fingers — it should feel completely smooth.
  • The sheet cracks badly when rolling: The meringue cooled too long before you rolled it. It will still taste good — press the cracked sections back together gently, and the whipped cream filling will hold the log shape once it is chilled.
  • The filling leaks out of the ends: The cream was whipped too soft. You want it at firm soft peaks, not loose. If it has already been spread and is too runny, refrigerate the assembled roll for 30 minutes before slicing — it will firm up.
  • The meringue sticks to the parchment when you try to flip it: The parchment was not fully smooth before baking, or the meringue was spread too thin at the edges. Slide a thin offset spatula under any stubborn spots rather than pulling from the top.
  • The raspberries make the cream watery: Fresh raspberries release juice once they sit on cream. Assemble and roll within 30 minutes of adding the fruit, and refrigerate immediately. Do not let the filled roll sit at room temperature.

Keeping it fresh

Once rolled, wrap the pavlova log loosely in cling film and refrigerate it. It holds well for up to 24 hours — the meringue will soften slightly overnight, which many people actually prefer since the texture becomes more uniformly marshmallow-like throughout. Beyond 24 hours the raspberries start to break down and the cream loses structure, so plan to serve it the same day you make it or the next day at the latest. Skip the garnish — not worth the extra dish. The roll looks finished on its own. Freezing is not recommended; the meringue turns rubbery once thawed. If you want to get ahead, you can bake the meringue sheet the day before, leave it unrolled on the parchment at room temperature, and add the filling just before serving.

  • Once baked, allow the meringue to cool slightly before turning it out onto a fresh sheet of parchment paper.
  • Whip the heavy cream with confectioners' sugar until soft peaks form.
  • Spread the whipped cream evenly over the meringue followed by a layer of fresh raspberries.
  • Using the parchment as guidance, gently roll the meringue from one end to the other, forming a log. Be careful not to squeeze too hard to avoid tearing.

Can I use a hand mixer instead of a stand mixer?

Yes, a hand mixer works fine. It will take a couple of minutes longer to reach stiff peaks — just keep going until the meringue is glossy and holds a firm peak that does not droop when you lift the beaters.

How do I know when the meringue is done baking?

The surface should feel dry and set when you lightly tap it, and the edges will look faintly golden. The center will still feel soft underneath that crust — that is correct, not a sign it needs more time.
