A modern twist on a classic Pavlova, this Pistachio Raspberry Pavlova Roll combines the nutty fragrance of pistachios with the tart sweetness of fresh raspberries. Perfect for springtime gatherings or a fancy tea party, it brings a delightful balance of textures and flavors, wrapped up in an elegant roll.
Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
In a clean mixing bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar, beating until the mixture is glossy and holds stiff peaks.
Gently fold in the vanilla extract, cornstarch, and finely chopped pistachios ensuring a light, airy mixture.
Spread this meringue mixture evenly onto the prepared baking sheet to create a rectangular shape, and bake for 30-35 minutes. The meringue should be crisp outside but still soft inside.
Once baked, allow the meringue to cool slightly before turning it out onto a fresh sheet of parchment paper.
Whip the heavy cream with confectioners' sugar until soft peaks form.
Spread the whipped cream evenly over the meringue followed by a layer of fresh raspberries.
