These are straightforward chocolate chip muffins — tender crumb, domed top, chocolate in every bite. The vanilla isn’t decorative; it rounds out the chocolate and keeps the flavor from tasting flat. They take 35 minutes start to finish and need nothing more than two bowls and a spatula.

The technique that matters

Mixing is the one thing that makes or breaks these muffins. Once the wet ingredients hit the dry, gluten starts developing with every stir — overmix and you get a rubbery, tunneled interior instead of a tender crumb. Fold just until the flour disappears, then stop. A few lumps in the batter are fine; they bake out. Semi-sweet chocolate chips are the right call here — milk chocolate chips tend to be too sweet against the brown sugar, and the muffins can taste cloying. If you only have chocolate bars on hand, chop them into rough chunks; uneven pieces actually give better chocolate distribution than uniform chips. For the brown sugar, light or dark both work — dark brown sugar will give a slightly more pronounced molasses flavor, which pairs well with the vanilla. Skip the garnish of reserved chips on top — not worth the extra step, and they tend to burn before the muffins are done anyway.
