The batter comes together quickly, and the cake bakes in about 25 minutes. It works well for birthdays, afternoon tea, or any occasion that calls for a reliable, crowd-friendly cake.
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan to prevent sticking.
In a mixing bowl, using an electric mixer, beat the eggs and granulated sugar at high speed until the mixture is thick and pale, creating ribbons, about 8 minutes.
Gently fold in the sifted flour and baking powder into the egg mixture in three parts, ensuring there are no lumps and maintaining the airy texture.
In another bowl, mix the warm milk and melted butter. Add in the vanilla extract.
Gradually stir in the milk and butter mixture into the batter, mixing just till combined.
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake for 25-30 minutes, or until the cake is golden and springs back when gently pressed, and a skewer inserted in the center comes out clean.
