S'mores Bars pack the classic combination of graham cracker, chocolate, and marshmallow into a baked bar that's easy to slice and share. A graham cracker crumb base is topped with chocolate and a layer of marshmallows, then finished under the broiler for a toasted top. The whole batch is ready in under an hour.
1 ½cupsgraham cracker crumbspreferably from whole grain graham crackers
¼cupgranulated sugarorganic if possible
½cupunsalted buttermelted
For the Filling:
1cupsemi-sweet chocolate chipshigh quality for richer flavor
1 ½cupsmini marshmallowsfor traditional s'mores experience
Instructions
Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, leaving some overhang for easy removal.
In a mixing bowl, combine the graham cracker crumbs and sugar. Stir in the melted butter until the mixture resembles wet sand. Press this crumb mixture firmly into the prepared pan to form an even crust.
Bake the crust for 10 minutes until lightly golden and set. Remove from oven and let cool slightly.
Sprinkle the chocolate chips evenly over the baked crust. Top with mini marshmallows, pressing them gently into the chocolate.
Return the pan to the oven and bake for 15 minutes or until the marshmallows are golden and puffed. Watch closely to avoid over-browning.
Allow the bars to cool before using the parchment overhang to lift them from the pan. Slice into 12 bars with a sharp knife, cleaning the knife between cuts for a neat appearance.

For extra crunch, add a handful of chopped nuts to the crust mixture.
If you prefer a gooier texture, use a higher amount of marshmallows and allow them to briefly soften before slicing.
