Whole-milk ricotta and honey are the two main flavors in this lighter-style cheesecake, which skips the dense cream-cheese base in favor of a softer, slightly grainy texture. It bakes in about 50 minutes and benefits from a full overnight chill before slicing.
Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan lightly using butter or a non-stick spray.
In a mixing bowl, combine graham cracker crumbs, melted butter, and 1 tablespoon of honey. Press this mixture firmly into the bottom of the prepared springform pan to form the crust.
Bake the crust for 10 minutes, then remove and allow it to cool while preparing the filling.
For the filling, blend ricotta and cream cheese together in a mixing bowl until creamy, using an electric mixer on medium speed.
Add the 1/2 cup of honey, eggs, vanilla extract, and lemon zest to the cheese blend. Beat until fully incorporated and smooth.
Pour the filling over the cooled crust in the springform pan, smoothing the top with a spatula.
Bake in the oven for about 1 hour, or until the edges are set and the center has a gentle jiggle.
Cool the cheesecake to room temperature before refrigerating for at least 3 hours, or overnight for best results.
Remove from the springform pan and serve chilled.
