Passionfruit Ice Cream delivers a bold balance of sweet and tangy flavor using fresh or frozen passionfruit pulp blended into a rich cream base. The custard is churned until smooth and creamy, then frozen until scoopable. Allow roughly 30 minutes of active prep plus several hours of freezing time.
In a medium saucepan over medium heat, combine the heavy cream, milk, sugar, and salt. Heat until the edges begin to bubble, but do not let it come to a boil, stirring occasionally to dissolve the sugar.
In a mixing bowl, whisk the egg yolks until smooth. Gradually add the warm cream mixture to the yolks, whisking constantly to prevent the eggs from cooking.
Return the mixture to the saucepan. Cook over low heat, stirring constantly, until the custard thickens and coats the back of a spoon, about 170°F (77°C).
Remove from heat and strain through a fine-mesh strainer into a clean bowl to ensure a silky texture. Stir in the passionfruit puree and vanilla extract. Let the mixture cool to room temperature.
Chill the mixture in the refrigerator for at least 4 hours, or overnight for maximum flavor infusion.
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions, until it reaches a soft-serve consistency. Transfer the ice cream to an airtight container and freeze for at least an additional 2 hours to set fully.
