This olive oil orange polenta cake has a slightly dense, golden crumb thanks to the coarse polenta, with bright citrus flavor from fresh orange zest and juice. Olive oil replaces butter, keeping the cake moist and adding a mild richness. It comes together in one bowl and bakes in about 45 minutes.
Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with olive oil and line the bottom with parchment paper.
In a medium bowl, whisk together the polenta, flour, baking powder, and salt. Set aside.
In a large bowl, whisk the olive oil and sugar until well combined. Add the eggs one at a time, mixing well after each addition, until the mixture is smooth and light.
Combine the orange juice and zest in a small bowl.
Alternately add the dry ingredients and the orange mixture into the olive oil mixture, beginning and ending with the dry ingredients. Mix gently until just combined; do not overmix.
Pour the batter into the prepared cake pan, smoothing the top with a spatula.
Bake for 35-40 minutes, or until the top is golden brown and a skewer inserted into the center of the cake comes out clean.
Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
