Preheat your oven to 325°F (160°C). Grease the 9-inch round cake pan and line the bottom with parchment paper for easy removal.
Separate the egg whites and yolks into two mixing bowls. Whisk the egg yolks with the granulated sugar until pale and light, then stir in the vanilla extract and lemon zest.
In a separate bowl, whisk the egg whites with a pinch of salt until soft peaks form. Gently fold the beaten egg whites into the yolk mixture, using a rubber spatula.
Sift together the flour and cornstarch. Gradually fold the dry ingredients into the egg mixture, ensuring not to deflate the batter.
