In a mixing bowl, combine 1 1/4 cups of all-purpose flour and 1/2 teaspoon of salt. Mix until thoroughly combined.
Add 1/2 cup of chilled, cubed unsalted butter to the flour mixture. Using a pastry cutter, cut the butter into the flour until the mixture resembles coarse crumbs, with pea-sized bits of butter visible.
Sprinkle 3-4 tablespoons of ice water over the flour-butter mixture. Gently mix until the dough just comes together, being careful not to overwork it. The dough should hold together when pinched, but should not be sticky.
