This is a two-layer carrot cake with a cream cheese frosting — straightforward to make, and genuinely good enough to serve at a birthday or bring to a potluck without any apology. Freshly grated carrots and vegetable oil keep the crumb dense and moist, while cinnamon, nutmeg, and a little ginger give each slice real warmth. It holds up well over several days, which makes it one of the more practical cakes you can bake on a weekend.

Before you start

Two things actually matter here. First, grate the carrots yourself on the fine side of a box grater — pre-shredded bags from the store are too dry and too thick, and they will leave stringy pockets in the crumb instead of melting into it. Second, make sure your cream cheese and butter are genuinely at room temperature before you start the frosting. Cold cream cheese beaten with cold butter turns lumpy fast, and no amount of extra mixing fully fixes it. Set them out at least an hour ahead. Everything else in this recipe is forgiving.

Wrap each layer tightly in plastic wrap once fully cooled and leave them at room temperature — do not refrigerate bare cake layers, as the fridge dries them out quickly. The frosting can be made up to three days ahead and kept in an airtight container in the fridge; let it come to room temperature and give it a quick beat before using. Once assembled and frosted, the cake keeps well in the fridge for up to four days — cover it loosely with plastic wrap or store it under a cake dome. Skip the garnish of extra grated carrot on top — not worth the extra prep when the frosting looks clean on its own. For longer storage, freeze the unfrosted layers wrapped in plastic and then foil for up to two months; thaw overnight at room temperature still wrapped.
