Black Forest Cake: A Decadent German Chocolate Cherry Delight

by Tammy Smith

The Black Forest Cake, known in its native Germany as Schwarzwälder Kirschtorte, is a visually striking and decadently rich dessert that has become an international symbol of celebratory indulgence. Its origins are rooted deep in the southwestern Black Forest region of Germany, a landscape famous not only for its rolling hills and dark pine forests but also for its abundance of sour cherries and traditional cherry-based brandy known as kirsch (or kirschwasser). This region-specific brandy lends the cake both its name and distinctive kick — its inclusion in the recipe is a nod to the cake’s unmistakable cultural heritage.

The key components of the Classic Black Forest Cake are chocolate sponge cake, whipped cream, cherries, and a subtle touch of kirsch. Together, these elements create a dessert that is complex in flavor and texture — rich yet airy, sweet yet tangy, and dressed to impress in elegant layers. Traditionally, the chocolate sponge is light and moist, supported by multiple layers of tart cherry filling and clouds of whipped cream. It’s then coated in additional whipped cream, trimmed with dark chocolate shavings, and adorned with maraschino or fresh cherries for a striking visual impact.

Historically, the Black Forest Cake began appearing in written recipes in the early 1900s, though several theories date its genesis slightly earlier, possibly as early as the late 19th century. The first officially documented recipe emerged in 1915, credited to German pastry chef Josef Keller. While its exact beginnings remain a topic of some debate among culinary historians, what is certain is that by the middle of the 20th century, the cake had risen to prominence throughout Europe, eventually becoming a menu staple in upscale patisseries and bakeries around the world.

Interestingly, earlier versions may have resembled a dessert parfait more than our modern cake, with individual elements layered in a dish or glass rather than stacked. The evolution into a tall, pillowy confection layered with tender cake happened as baking techniques advanced and presentation became as important as flavor.

This cake isn’t just a popular dessert — it’s also a symbol of festivity and tradition for many German families. In fact, its preparation is often reserved for special occasions like birthdays, anniversaries, and weddings. In Germany, many bakeries pride themselves on their house versions of Schwarzwälder Kirschtorte, sometimes even creating competitive tiers of excellence within the craft.

In the modern kitchen, the recipe has witnessed adaptations: kirsch may be replaced with simpler cherry syrup for a non-alcoholic version, and jarred cherries are often used for convenience. Our Classic Black Forest Cake recipe retains the traditional spirit while allowing for practicality — incorporating fresh or jarred Morello cherries, genuine kirsch, light homemade whipped cream, and rich chocolate cake for a balanced and authentic taste.

Whether you’re introducing it to a new table of guests or continuing a generational tradition, the Black Forest Cake remains a timeless testament to indulgence, heritage, and the art of baking.

Ingredients

For the Cake:

  • 1 ¾ cups all-purpose flour
  • 1 ¾ cups sugar
  • ¾ cup unsweetened cocoa powder preferably Dutch-processed
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs room temperature
  • 1 cup whole milk room temperature
  • ½ cup vegetable oil or canola oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Cherry Filling:

  • 1 pound fresh or jarred sour cherries preferably Morello
  • ½ cup sugar
  • ¼ cup kirsch cherry brandy, optional

For the Whipped Cream:

  • 2 cups heavy cream chilled
  • ¼ cup powdered sugar or more to taste
  • 1 teaspoon vanilla extract

For the Garnish:

  • ½ cup dark chocolate shavings
  • 12 pieces cherries for topping

Instructions

Prepare the Cake:

  • Preheat your oven to 350°F (175°C). Grease and flour three 10-inch round cake pans.
  • In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix until well blended.
  • Add the eggs, milk, oil, and vanilla to the dry ingredients. Beat on medium speed for about 2 minutes until smooth.
  • Stir in boiling water until the batter is evenly mixed. It will be thin.
  • Divide the batter evenly between the prepared pans.
  • Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then remove from pans to cool completely on a wire rack.

Make the Cherry Filling:

  • In a saucepan, combine cherries and sugar over medium heat. Stir until sugar dissolves and the mixture is heated through.
  • If using, stir in kirsch. Let it cool to room temperature.

Whip the Cream:

  • In a chilled bowl, whip the heavy cream until soft peaks form.
  • Add powdered sugar and vanilla, continuing to whip until stiff peaks are formed. Be cautious not to over-whip.

Assemble the Cake:

  • Use a cake leveler to even the tops of the cakes, if necessary.
  • Place one cake layer on a serving plate and gently brush with kirsch.
  • Spread a layer of whipped cream on top, followed by a third of the cherry filling.
  • Repeat with the remaining layers, finishing with a layer of cake, then whipped cream on top and sides.

Decorate the Cake:

  • Garnish the sides with chocolate shavings and top with whole cherries.

Notes

  • Consider refrigerating the assembled cake for an hour before serving to let the flavors meld.
