Instructions
 

  • In a medium saucepan, combine the whole milk, heavy cream, and half of the granulated sugar. Heat over medium heat until steaming but not boiling, stirring occasionally.
  • In a mixing bowl, whisk together the remaining sugar and cocoa powder. Add the chopped dark chocolate and egg yolks, creating a smooth paste.
  • Slowly temper the chocolate mixture by gradually whisking in about 1/2 cup of the hot milk mixture, ensuring the yolks don’t scramble.
  • Return the combined mixture to the saucepan. Cook over medium-low heat, stirring constantly until the mixture thickens slightly and coats the back of a spoon, approximately 8-10 minutes. Avoid boiling.
  • Remove from heat and stir in vanilla extract and salt. Strain through a fine mesh sieve into a clean bowl to ensure a silky texture. Cool to room temperature.
