This homemade chocolate ice cream gets its deep flavor from quality cocoa and melted dark chocolate churned into a rich custard base. Using an ice cream machine, the whole process takes around 45 minutes of active work plus several hours of freezing time. The result is a dense, scoopable ice cream with a pronounced chocolate flavor.
In a medium saucepan, combine the whole milk, heavy cream, and half of the granulated sugar. Heat over medium heat until steaming but not boiling, stirring occasionally.
In a mixing bowl, whisk together the remaining sugar and cocoa powder. Add the chopped dark chocolate and egg yolks, creating a smooth paste.
Slowly temper the chocolate mixture by gradually whisking in about 1/2 cup of the hot milk mixture, ensuring the yolks don't scramble.
Return the combined mixture to the saucepan. Cook over medium-low heat, stirring constantly until the mixture thickens slightly and coats the back of a spoon, approximately 8-10 minutes. Avoid boiling.
Remove from heat and stir in vanilla extract and salt. Strain through a fine mesh sieve into a clean bowl to ensure a silky texture. Cool to room temperature.
Chill the mixture thoroughly in the refrigerator for at least 4 hours or overnight. Process in an ice cream maker according to the manufacturer’s instructions. Transfer to an airtight container and freeze until firm, about 2 hours.
