Warm and Comforting British Bread and Butter Pudding

by Lori Wilson

Bread and Butter Pudding is one of the quintessential comfort desserts, deeply rooted in British culinary tradition and history. This humble yet indulgent dish is a testament to the ingenuity of frugal home cooking, where simple, everyday ingredients are transformed into something rich, warming, and utterly satisfying. Its origins can be traced back to the early 18th century, with mentions in British cookbooks as a way to repurpose stale bread—an early nod to the now trendy concept of reducing food waste.

The Classic Bread and Butter Pudding featured in this recipe stays true to its traditional roots, using thickly sliced bread—ideally a rich loaf like brioche or challah—for its soft crumb and buttery flavor. These slices are generously buttered, which adds depth and richness once baked, and then layered with dried fruits like raisins or sultanas to add sweet, chewy bites throughout. The inclusion of warming spices, such as cinnamon and nutmeg, is a nod to time-honored Victorian pantry staples and adds aromatic complexity to the pudding.

At the heart of this dish is the egg custard—made with whole milk or a mixture of milk and cream for extra silkiness. The custard is poured over the layered bread and allowed to soak into the slices, ensuring a creamy interior after baking. Once nestled into a buttered baking dish, the pudding is baked until golden brown on top and gently set through the center. The top becomes slightly crisp as it bakes, creating a delightful contrast to the soft, custardy middle.

What makes Bread and Butter Pudding particularly enduring is its versatility. While this classic version leans into traditional ingredients, it offers ample opportunity for customization. A splash of sherry or rum can elevate the custard mixture into something more luxurious, and other dried fruits—such as apricots or cranberries—can be used for variation. Some more modern twists even include dark chocolate chips for an extra layer of indulgence.

Historically, Bread and Butter Pudding was often associated with Sunday roasts and family dinners—a nourishing finale that brought warmth and comfort to the table. Over time, it has evolved from a simple household favorite to a celebrated dessert featured in gastropubs and high-end bistros alike. Despite this evolution, its soul has remained unchanged: it is a dish about cozy flavors, shared memories, and making the most of simple ingredients.

Whether served warm with a generous splash of cream, a drizzle of custard, or even teamed with vanilla ice cream, Bread and Butter Pudding remains a beloved dessert across generations. For many, it recalls childhood memories and festive moments, a dessert whose charm lies not just in its taste, but in its familiarity. This recipe honors that charm while offering a reliable, delicious way to bring a taste of tradition to modern kitchens.

Bread and butter pudding is a traditional British baked dessert made by layering buttered bread slices in a dish, pouring over a sweetened egg custard, and baking until golden and just set. Stale or day-old bread works best because it absorbs the custard without falling apart. The recipe takes about 15 minutes to assemble and 35 to 40 minutes in the oven.

Equipment

  • Oven
  • Baking dish
  • Mixing Bowl
  • Whisk
  • serrated knife

Ingredients

  • 8 slices bread preferably day-old and from a loaf such as brioche or challah
  • 4 tbsp butter softened
  • ¼ cup raisins or sultanas
  • 3 cups whole milk or half milk, half cream for extra richness
  • 3 large eggs
  • ½ cup sugar granulated
  • 1 tsp vanilla extract
  • ½ tsp ground nutmeg freshly grated
  • ½ tsp ground cinnamon

Instructions

  • Preheat your oven to 350°F (175°C). Butter a baking dish generously to prevent sticking.
  • Spread the softened butter on one side of each bread slice and cut them diagonally into triangles.
  • Arrange a layer of bread, buttered side up, in the bottom of the dish, sprinkle with a few raisins, and add a light dusting of nutmeg and cinnamon. Repeat layering until all bread is used.
  • In a mixing bowl, whisk together the eggs and sugar, then gradually add the milk, continuing to whisk. Stir in the vanilla extract.
  • Pour the egg mixture over the bread layers, ensuring it gets soaked into every crevice. Allow the pudding to sit for about 20 minutes, letting the bread absorb the custard mixture.
  • Bake the pudding in your preheated oven for 45 minutes, or until the top is golden and the custard is set with a slight jiggle in the center.

Notes

  • For added flavor, consider adding a splash of rum or sherry to the custard mix.
  • Stale bread works best for soaking up the flavors.
