Creamy Tropical Coconut Bliss: A Southeast Asian Delight

by Tammy Smith

Coconut ice cream is a beloved dessert that captures the essence of tropical indulgence. Rooted in Southeast Asian cuisine, where coconuts are abundant, this creamy frozen treat has been enjoyed for centuries as a refreshing delight in warm climates. Our Tropical Coconut Bliss Ice Cream is a modern twist on this classic, featuring a luscious blend of rich coconut milk, sweetened condensed milk, and fragrant vanilla extract, all brought together with a sprinkle of lightly toasted shredded coconut for added texture and depth.

The Beauty of Coconut Ice Cream

Unlike traditional ice creams made with heavy cream and eggs, coconut ice cream uses the natural creaminess of coconut milk, offering a dairy-free or nearly dairy-free dessert that is both light and decadently smooth. The full-fat coconut milk forms a rich, fatty base that mimics the texture of traditional custards, while the sweetened condensed milk adds a velvety smoothness, eliminating the need for excessive churning. This makes coconut ice cream an excellent choice for those seeking a lighter yet indulgent dessert.

Inspired by Southeast Asia

Our recipe is inspired by the coconut-based desserts of Southeast Asia, particularly from countries like Thailand, the Philippines, and Indonesia, where coconut is a key ingredient in many sweets. In Thailand, street vendors serve coconut ice cream in halved coconut shells, often garnished with sweet sticky rice, toasted peanuts, and palm sugar syrup. In the Philippines, coconut ice cream is frequently paired with local ingredients like jackfruit, ube (purple yam), and macapuno (a special coconut variety with jelly-like flesh). In Indonesia, traditional coconut-based ice creams like es puter share a similar creamy texture, making coconut a staple in regional desserts.

A Simple and Elegant Approach

This recipe simplifies the traditional coconut ice cream process, forgoing egg-based custards in favor of direct simmering to meld the flavors together. Sweetened condensed milk not only adds the necessary sweetness but also ensures the ice cream maintains its smooth, stable texture—no ice cream maker required. To enhance the natural coconut aroma, a touch of vanilla extract is added, and a pinch of salt brings balance to the sweetness.

A standout feature of this recipe is the toasted shredded coconut, which provides a delightful crunch and intensifies the nutty, caramelized flavors. Toasting the coconut brings out its essential oils, elevating the flavor profile while complementing the richness of the coconut base. For extra flair, feel free to add mix-ins like crushed macadamia nuts, chocolate shavings, or a swirl of tropical fruit purée, such as mango or pineapple.

Serving Suggestions

Once fully frozen, the Tropical Coconut Bliss Ice Cream is ready to enjoy on its own, but it can also be dressed up with a variety of toppings to enhance its tropical flair. A drizzle of coconut caramel or a sprinkle of flaky sea salt will add a sophisticated touch. For a Piña Colada twist, consider stirring in pineapple chunks or layering the ice cream with coconut rum sauce.

Ultimately, this ice cream is more than just a dessert—it’s an experience. Each spoonful transports you to a sun-drenched island, where the air is thick with the scent of fresh coconuts and the gentle waves beckon you to stay a little longer. Whether you’re making it for a special occasion or enjoying a weeknight treat, this coconut ice cream promises a taste of the tropics in every creamy bite.

Coconut ice cream made at home uses full-fat coconut milk as its base, giving it a rich, creamy consistency without any dairy. Churn time runs about 25 minutes in a standard ice cream maker, followed by a few hours in the freezer to firm up completely.

Equipment

  • 1 Ice Cream Maker
  • 1 Mixing Bowl
  • 1 Sauce Pan
  • 1 Whisk

Ingredients

  • 1 can full-fat coconut milk 400ml can, room temperature, preferably organic
  • 1 cup sweetened condensed milk for added sweetness and creamy texture
  • 1 tsp vanilla extract pure extract for best flavor
  • ½ cup shredded coconut lightly toasted for added texture
  • ¼ tsp salt a pinch to round out the flavors

Instructions

  • In a mixing bowl, whisk together the coconut milk, sweetened condensed milk, vanilla extract, and salt until smooth and well blended.
  • Transfer the mixture into a saucepan and heat gently over medium heat, stirring constantly, until the mixture is warm and flavors meld, approximately 5-7 minutes. It's important not to let it boil.
  • Remove from heat and let the mixture cool to room temperature. This cooling step is crucial for ensuring the creamy texture of the ice cream.
  • Once cooled, pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions, typically around 20-30 minutes. The mixture will start thickening and resemble soft-serve ice cream when ready.
  • About five minutes before completion, add the toasted shredded coconut. This will incorporate the coconut evenly throughout the ice cream.
  • Transfer the churned ice cream into an airtight container and freeze for at least 4 hours, or until firm, to allow flavors to fully develop.

Notes

  • To enhance the coconut flavor, you can add a few drops of coconut extract along with the vanilla.
  • For a twist, try incorporating pineapple chunks or a swirl of pineapple syrup for a Piña Colada-inspired flavor.
