Zucchini stands in for fruit in this easy crisp, seasoned with warming spices and topped with a crunchy oat and butter crumble. It bakes in roughly 40 minutes and is a clever way to use up garden zucchini in a sweet, crowd-pleasing dessert.
Preheat the oven to 375°F (190°C). Lightly grease a 9x9 inch baking dish and set aside.
In a large mixing bowl, combine 4 cups of peeled, seeded, and chopped zucchini with 2 tablespoons of all-purpose flour, 1 cup of granulated sugar, 1 tablespoon of freshly squeezed lemon juice, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of ground nutmeg. Stir until the zucchini is evenly coated.
Transfer the zucchini mixture into the prepared baking dish, spreading it out evenly.
In a separate bowl, combine 1 cup of rolled oats, 1 cup of all-purpose flour, 1 cup of packed brown sugar, and 1 teaspoon of ground cinnamon. Stir in 1/2 cup of melted butter until the mixture is crumbly.
Evenly sprinkle the crisp topping over the zucchini mixture.
Bake for 40 to 45 minutes or until the top is golden brown and the zucchini is tender.
Allow to cool for a few minutes before serving warm, with a scoop of vanilla ice cream if desired.
