Instructions
In a mixing bowl, combine the chia seeds and freshly squeezed orange juice. Stir gently to mix.
Add honey, vanilla extract, and a pinch of sea salt. Whisk thoroughly until all ingredients are well combined.
Cover the bowl and refrigerate for at least 1 hour, or until the mixture has thickened to a pudding-like consistency.
Once set, divide the pudding into serving bowls. Garnish with orange zest or a small slice of fresh orange for extra color and flavor.

For an extra burst of flavor, mix in a few fresh mint leaves.
