Preheat your oven to 350°F (175°C). Line the muffin tin with cupcake liners.
In a large mixing bowl, cream together the butter and granulated sugar using an electric mixer until light and fluffy, about 4 minutes. Look for a pale, creamy texture.
Add the eggs, one at a time, beating well after each addition. Add in the vanilla extract, lemon zest, and lemon juice, mixing until well combined. The mixture will have a fresh, citrus aroma.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the flour mixture to the wet ingredients, alternating with the milk. Mix until just combined, being careful not to overmix. The batter should be smooth and slightly thick.
