Layers of vanilla sponge are filled and frosted with a white chocolate buttercream, then finished with fresh strawberries for a cake that's as pretty as it is easy to pull off. Allow around 90 minutes from start to finish, including cooling time before assembly.
0.25poundsunsalted buttersoftened to room temperature
1teaspoonvanilla extract
2cupspowdered sugarsifted to remove lumps
Decoration
1pintfresh strawberrieshulled and sliced
Instructions
Preheat the oven to 175°C (350°F). Prepare two 8-inch round cake pans by greasing them and lining the bottoms with parchment paper.
In a bowl, sift together the flour, baking powder, and salt. Sifting ensures a smooth batter and a tender cake crumb.
In a separate bowl, cream the butter and sugar until light and fluffy. This should take about 5 minutes on medium speed using a mixer.
Add the eggs one at a time to the butter mixture, mixing well after each addition. Then, add the vanilla extract and mix until just combined.
Alternately add the flour mixture and milk to the batter, beginning and ending with the flour mixture. Mix until just combined to avoid overworking the batter.
Divide the batter evenly between the prepared cake pans, smoothing the tops with a spatula. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Allow cakes to cool in the pans for 10 minutes before inverting onto a wire rack to cool completely.
For the frosting, melt the white chocolate in a heatproof bowl set over a pot of simmering water or microwave on low, stirring until smooth. Allow to cool slightly.
In another bowl, beat the cream cheese and butter together until creamy and smooth. Add the melted white chocolate and vanilla, mixing until just combined.
Gradually add the powdered sugar, continuing to mix until the frosting is smooth and spreadable.
To assemble, place one cake layer on a serving plate. Spread a layer of frosting over the top, then arrange a layer of sliced strawberries. Repeat with the second layer.
Cover the top and sides of the cake with the remaining frosting. Garnish with a few whole strawberries for a vibrant finish.

Notes
For a deeper flavor, try roasting the strawberries lightly before layering them on the cake. The roasting process caramelizes the natural sugars and intensifies their sweetness.
