A simple custard base gives it a rich, scoopable texture. Allow around 30 minutes of active prep plus several hours of freezing time.
In a saucepan over medium heat, combine the heavy cream, whole milk, and half of the granulated sugar. Stir gently until the sugar dissolves and the mixture is hot but not boiling.
In a mixing bowl, whisk the egg yolks with the remaining sugar until pale and thick. Gradually add the hot cream mixture to the egg yolks, whisking continuously to avoid curdling.
Return the mixture to the saucepan over low heat. Cook, stirring constantly, until it thickens enough to coat the back of a spoon. This should take about 5-7 minutes.
Strain the custard into a bowl to remove any cooked egg bits. Allow to cool completely before proceeding.
Melt the white chocolate gently in a double boiler or microwave. Stir into the cooled custard along with the raspberries, mashing slightly to blend the flavors.
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. Transfer to a container and freeze until firm.
