The lemon cuts through the sweetness of the white chocolate cleanly, and the whole batch can be made in about 30 minutes of active time plus chilling.
Place the finely chopped white chocolate into a mixing bowl.
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer, avoiding a full boil.
Pour the hot cream over the white chocolate and let it sit undisturbed for 1 minute.
Whisk the mixture gently until the chocolate is fully melted and smooth. If lumps remain, microwave in short 10-second intervals, stirring in between, until smooth.
Add the unsalted butter, lemon zest, and lemon extract to the white chocolate mixture. Stir until fully combined and glossy.
Cover the bowl with plastic wrap and refrigerate for about 1 hour, or until the mixture is firm yet pliable.
Line a baking sheet with parchment paper. Using a teaspoon or a melon baller, scoop small amounts of the truffle mixture and roll it into balls.
Coat each truffle with powdered sugar and place them on the prepared baking sheet.
