Prepare the Crust: In a mixing bowl, combine flour, sugar, and salt. Add chilled butter and mix with your fingertips until the mixture resembles coarse crumbs. Add the egg yolk and mix until the dough comes together. Add water as needed. Press the dough into a disk, wrap in plastic, and refrigerate for 15 minutes.
Pre-bake the Crust: Preheat the oven to 350°F (175°C). Roll out the dough on a floured surface to fit your tart pan. Transfer the dough to the pan, trim the edges, and prick the base with a fork. Line with parchment and fill with pie weights. Bake for 10 minutes, remove weights, and bake another 5 minutes until lightly golden.
Prepare the Filling: Toast the walnuts on a baking sheet for 8 minutes. In a saucepan, melt the butter over medium heat, then add honey and cream. Stir in vanilla seeds. Simmer for 5 minutes until slightly thickened. Stir in the toasted walnuts.
Assemble the Tart: Pour the walnut mixture into the pre-baked crust. Smooth with a spatula. Bake at 350°F (175°C) for 30 minutes, until the filling is bubbly and the crust is golden brown.
Cool and Serve: Allow the tart to cool completely before slicing. Serve with a dollop of whipped cream or vanilla ice cream for added indulgence.
