Panna Cotta Preparation:
In a small bowl, sprinkle the gelatin over the cold water and let it bloom for about 5 minutes. This allows the gelatin to hydrate properly.
In a medium saucepan over medium heat, combine the heavy cream, milk, and sugar. Stir until the sugar is completely dissolved, making sure the mixture doesn’t come to a boil.
Remove the saucepan from the heat and stir in the vanilla extract. Add the bloomed gelatin, stirring continuously until the gelatin is fully dissolved. A smooth mix is crucial for the perfect set.
Divide the mixture evenly into six ramekins or dessert glasses. Allow them to cool at room temperature before transferring to the refrigerator to chill and set for a minimum of 4 hours, or preferably overnight.
Berry Sauce Preparation:
In a small saucepan over medium heat, combine the mixed berries, sugar, and lemon juice. Cook until the berries break down and the mixture resembles a loose sauce, about 5-7 minutes.
Remove from heat and allow the sauce to cool completely before serving it over the set panna cotta.
