Vanilla Custard Cream Donuts

Ingredients
For the Donut Dough:

- 1 packet instant yeast about 2 1/4 teaspoons
- 1 teaspoon salt
- ¾ cup whole milk warm to touch
- 2 large eggs room temperature
- ¼ cup unsalted butter softened
For the Vanilla Custard:
- 2 cups whole milk
- ½ cup granulated sugar
- 3 large egg yolks
- ¼ cup cornstarch
- 1 tablespoon vanilla extract pure vanilla extract
- ¼ cup unsalted butter cut into small pieces
Instructions
Step 1:
- In a mixing bowl, combine flour, sugar, yeast, and salt. Gradually add warm milk and eggs, mixing until a dough forms.
- Knead in softened butter until the dough is smooth and elastic, about 8-10 minutes.
- Cover and let rise in a warm, draft-free area until doubled in size, about 1 hour.
Step 2:
- For the custard, heat milk and sugar in a saucepan over medium heat until steaming. Meanwhile, whisk egg yolks and cornstarch in a bowl.
- Gradually whisk hot milk into the yolk mixture, then return to the saucepan and cook over medium heat, whisking constantly until thick and boiling.
- Remove from heat, stir in vanilla and butter, then strain into a bowl. Cover with plastic wrap directly on the surface and cool completely.
Step 3:
- Roll out the dough on a floured surface to 1/2-inch thickness. Cut out rounds using a cutter.
- Let rise again for 30 minutes.
Step 4:
- Heat oil in a deep fryer or pot to 350°F (175°C). Fry donuts until golden brown, about 2-3 minutes per side.
- Drain on a wire rack.
Step 5:
- Fill a piping bag with cooled custard. Poke a hole in the side of each donut and fill with the custard.
- Dust with confectioners' sugar before serving.
