Turtle cheesecake layers a graham cracker crust with a classic cream cheese filling, then tops it with chocolate ganache, caramel sauce, and toasted pecans — the same combination found in turtle candies. It needs several hours to chill before slicing, so it works well made the day before. The toppings can be added just before serving.
Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
For the Crust:
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture evenly into the bottom of the prepared springform pan. Bake for 10 minutes and allow to cool on a rack.
For the Filling:
In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add sugar and flour, mixing well until creamy. Add eggs one at a time, beating after each addition. Stir in sour cream and vanilla extract until just combined.
Pour the filling over the cooled crust and spread evenly. Bake in the preheated oven for 50 minutes or until the center is set and only slightly jiggles.
Remove the cheesecake from the oven and allow it to cool to room temperature. Refrigerate for at least 4 hours or overnight.
For the Topping:
Once the cheesecake is chilled, drizzle warmed caramel sauce over the top followed by melted chocolate. Sprinkle with chopped pecans.
