Treacle tart is a British baked dessert with a short, buttery pastry shell filled with golden syrup mixed with breadcrumbs and a squeeze of lemon juice. The breadcrumbs absorb the syrup as it bakes, setting the filling to a firm, sticky consistency. It takes roughly 45 minutes in the oven and is typically served warm with cream or custard.
For the pastry crust, combine the flour and sugar in a bowl. Add the cold, diced butter. Rub the mixture together with your fingers until it resembles coarse breadcrumbs.
Add the egg yolk and water. Stir until the dough begins to come together. Knead lightly, wrap in plastic wrap, and refrigerate for 15 minutes.
Roll the dough out on a lightly floured surface to fit a 9-inch tart pan. Trim the edges and dock the base with a fork.
For the filling, gently heat the golden syrup until liquid. Remove from heat and mix in the breadcrumbs, lemon zest and juice. Stir in the beaten egg until well combined.
Pour the filling into the prepared tart crust. Smooth the surface with a spatula.
Bake the tart for 35-40 minutes, or until the filling is set and the crust is golden brown.
Let the tart cool slightly before slicing. Serve warm with a dollop of clotted cream or a scoop of vanilla ice cream, if desired.
