Scottish tablet is a firm, crumbly confection made by cooking sugar, butter, and condensed milk to a soft-ball stage, then beating it as it cools to create its distinctive grainy texture. It sits somewhere between fudge and hard candy, and a full batch takes around 45 minutes on the stovetop.

Instructions
Prepare a 9x13 inch (23x33 cm) baking pan by lining it with parchment paper. This will make it easier to remove the tablet later.
In a large, heavy-bottomed saucepan, combine the sugar and milk over medium heat. Stir occasionally until the sugar fully dissolves. It should look translucent.
Stir in the butter and sweetened condensed milk. Increase the heat slightly and bring the mixture to a gentle boil, stirring constantly to prevent it from sticking.
Allow the mixture to boil gently for about 20 minutes, stirring frequently. You'll notice it darkening slightly and thickening in consistency—aim for a light caramel color.
Remove the pan from the heat, add the vanilla extract, and beat the mixture with a wooden spoon until it thickens and starts to crystallize. This gives the tablet its signature crumbly texture.
Pour the mixture into the prepared baking pan, smoothing the surface with a spatula. Allow it to set at room temperature for a couple of hours, then cut into squares before it cools completely.
