Toasted Coconut Lime Bars have a buttery shortbread base topped with a tangy lime curd and a layer of golden toasted coconut. They take about 1 hour from start to finish, plus chilling time, and cut cleanly into neat bars once fully set.
Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, ensuring some overhang for easy removal later.
In a mixing bowl, combine 1 cup of all-purpose flour, 1/4 cup of granulated sugar, and 1/4 teaspoon of salt. Add the diced cold unsalted butter, using your fingers to combine until the mixture resembles coarse crumbs.
Firmly press the mixture into an even layer at the bottom of the prepared pan. Bake for 12-15 minutes or until the edges are lightly golden.
While the base bakes, whisk together the eggs, 1 cup of granulated sugar, 1/2 cup of fresh lime juice, lime zest, and 1/2 teaspoon of baking powder in a bowl until smooth.
Pour the lime mixture over the hot crust and return to the oven. Bake for another 10-12 minutes, until the filling is set and doesn't jiggle in the center.
Let the bars cool completely in the pan. Once cooled, sprinkle with toasted coconut flakes. Lift from the pan using the parchment overhang, slice into bars, and serve.
