⅓cupunsalted butter, melted
For the Custard Filling:
3largeeggsroom temperature
½cupgranulated sugar
1cupcoconut milkfull-fat for creaminess
1teaspoonvanilla extractpure
¼teaspoonsalt
Instructions
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs and toasted coconut. Stir in melted butter until the mixture resembles moist sand.
Press the crust mixture into a 9-inch pie pan evenly, ensuring it covers the bottom and sides firmly. Bake the crust for 10 minutes until lightly golden. Remove from oven and let it cool on a rack.
In a saucepan over low heat, whisk together eggs, sugar, coconut milk, vanilla extract, and salt. Stir continuously until the mixture thickens slightly, enough to coat the back of a spoon. Do not let it boil.
Pour the custard filling into the pre-baked crust. Bake for an additional 35-40 minutes, or until the custard is set but still jiggles slightly in the center.
Let the pie cool at room temperature before transferring it to the refrigerator. Chill for at least 2 hours to allow the flavors to meld and the custard to fully set.
