Ingredients
- 1 cup sweetened shredded coconut ensure freshness for best flavor
- ½ cup slivered almonds lightly toasted for enhanced flavor
- ⅔ cup sweetened condensed milk aids in binding and adding moisture
- 1 tsp vanilla extract opt for pure vanilla for richer taste
- 2 large egg whites room temperature for optimal volume
- ¼ tsp salt
Instructions
- Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper to prevent sticking.
- In a mixing bowl, combine the sweetened shredded coconut and the lightly toasted slivered almonds.
- Stir in the sweetened condensed milk and vanilla extract, mixing until all ingredients are well incorporated.
- In a separate bowl, whisk the egg whites and salt until stiff peaks form. This will add airiness to the macaroons.
- Gently fold the egg whites into the coconut mixture, taking care not to deflate the egg whites.
- Using a cookie scoop, place mounds of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
- Bake for 15 minutes or until the macaroons are golden brown on the outside yet still soft in the center.
Notes
- If a nut-free version is needed, substitute almonds with additional coconut.
- To achieve perfectly toasted almonds, place them on a baking sheet in a preheated oven at 350°F (177°C) for 5-7 minutes, stirring halfway through.
