Tarte aux Pommes is a French-style apple tart built on a buttery shortcrust pastry base and topped with thinly sliced apples arranged in overlapping circles. A light apricot glaze brushed on after baking gives the surface its characteristic shine; allow about 1 hour 15 minutes from prep to table.
To make the pastry: In a large mixing bowl, combine the all-purpose flour and salt. Add cold, diced butter and rub the mixture between your fingers until it resembles coarse crumbs. Gradually add the ice water, mixing until the dough just comes together. Shape into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
To prepare the filling: Preheat your oven to 375°F (190°C). In a bowl, combine apple slices with sugar, melted butter, fresh lemon juice, and ground cinnamon. Stir gently to coat the apples thoroughly.
Assemble the tart: Roll out the chilled pastry dough on a floured surface to fit your 9-inch tart pan. Carefully transfer the dough to the pan, pressing gently to fit. Arrange the apple slices in concentric circles, starting from the outer edge and working towards the center.
Bake and glaze: Place the tart on a baking sheet and bake for 35–40 minutes, or until the apples are tender and the crust is golden brown. While the tart bakes, gently heat the apricot jam in a small saucepan until it is thin enough to brush. Once the tart is baked, brush the warm apricot glaze over the apples to give a shiny finish.
