Taho is a classic Filipino street food made from soft silken tofu, sweet brown sugar syrup called arnibal, and chewy tapioca pearls. Served warm, it comes together in about 20 minutes and works equally well as a light breakfast or an afternoon snack.
Prepare the Syrup: In a medium-sized saucepan, combine 1 cup of brown sugar and 1 cup of water. Heat over medium flame, stirring constantly until the sugar dissolves completely. Add 1/2 teaspoon of vanilla extract. Let it simmer on low for about 5 minutes until slightly thickened. Remove and let cool.
Prepare Tapioca Pearls: Rinse the soaked tapioca pearls thoroughly. Boil them in a pot of water for about 5 minutes until translucent and chewy. Drain using a strainer and set aside.
Prepare the Tofu: Gently heat the silken tofu in a saucepan over low heat, maintaining its softness. Stir occasionally to prevent sticking and ensure even heating.
Assemble the Taho: In serving bowls, layer the tofu, followed by a generous drizzle of the syrup and a scoop of tapioca pearls. Serve warm.
