Sweet Red Bean Dessert uses cooked adzuki beans sweetened and simmered into a smooth, lightly sweet paste sometimes called anko. The flavor is mild and earthy, making it a satisfying dessert on its own or as a filling. The full process takes around 1 to 1.5 hours, most of which is hands-off simmering time.
1cupdried red beanssuch as adzuki beans, rinsed and drained
4cupswaterplus more if needed
¾cupgranulated sugar
¼teaspoonsalt
Instructions
In a medium saucepan, combine red beans and water. Bring to a boil over medium-high heat, then reduce heat to low and simmer for about 45 minutes, or until beans are soft yet still holding their shape.
Drain the beans through a fine mesh strainer and return them to the saucepan.
Add the sugar and salt to the beans, stirring continuously over low heat until the sugar dissolves and the mixture thickens, about 15 minutes.
Remove from heat and allow to cool slightly before serving.

Lori’s Tips:
For a smoother paste, mash the cooked beans slightly before adding sugar.
Alternatively, run them through a food processor for a refined texture.
If you prefer a less sweet dessert, adjust the sugar to your taste.
