Sweet potato pie is a Southern staple made with a smooth, spiced filling of mashed sweet potatoes, eggs, cream, and warm spices like cinnamon and nutmeg in a flaky pastry shell. The natural sweetness of the potatoes means less added sugar is needed compared to many other custard pies. It bakes in about 55 to 60 minutes and is a classic choice for Thanksgiving and holiday tables.
In a large pot, boil the sweet potatoes in salted water for about 20 minutes, or until they are tender and a fork can easily pierce them. Drain and let them cool slightly.
Mash the sweet potatoes until smooth. You can use a potato masher for a rustic texture, or a food processor for a finer consistency.
In a mixing bowl, blend together the mashed sweet potatoes, sugar, melted butter, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt. Use a hand mixer or stand mixer on medium speed until the mixture is smooth and well combined.
Pour the sweet potato mixture into the prepared 9-inch pie crust, smoothing the top with a spatula.
Bake in the preheated oven for 45 minutes to 1 hour, or until a knife inserted in the center comes out clean. The pie should be slightly puffed and set around the edges.
Allow the pie to cool to room temperature before serving. This ensures the filling is firm and easy to slice.

Notes
For a richer flavor, consider using roasted sweet potatoes instead of boiled.
You can also add a splash of bourbon for an adult twist.
