Sweet corn ice cream uses fresh or frozen corn kernels steeped in the cream base to pull out the vegetable's natural milky sweetness. The corn is then strained out, leaving a smooth, pale yellow custard that tastes unmistakably of summer corn. The whole process takes roughly 6–7 hours from stovetop to freezer.
In a medium saucepan, combine the corn kernels and heavy cream. Bring to a simmer over medium heat and cook for 10 minutes to infuse the corn flavor into the cream.
Blend the corn and cream mixture using a blender until smooth. Strain through a fine-mesh sieve into a bowl, pressing down to extract as much liquid as possible. Discard the solids.
Return the strained creamy liquid to the saucepan. Add the whole milk and sugar, stirring to combine. Bring to a gentle simmer over medium heat.
In a separate mixing bowl, whisk the egg yolks until smooth. Gradually pour in some of the hot milk mixture while whisking constantly to temper the yolks.
Pour the yolk mixture back into the saucepan with the remaining milk mixture. Stir constantly over low heat until the mixture thickens enough to coat the back of a spoon (about 170°F or 77°C), then remove from heat.
Stir in vanilla extract and salt. Allow the custard to cool to room temperature, then cover and refrigerate until thoroughly chilled, at least 4 hours or overnight.
Pour the chilled custard into an ice cream maker and churn according to the manufacturer's instructions. Transfer to a freezer-safe container and freeze for an additional 2-4 hours, until firm.
