Sweet Corn Dessert Hush Puppies
These dessert hush puppies take the familiar cornmeal fritter in a sweeter direction, adding warm spices like cinnamon and a touch of sugar to the batter. Fried until golden, they have a crisp shell with a soft, tender center. They work well as an after-dinner treat or alongside a cup of coffee or tea.

Ingredients
- 1 cup yellow cornmeal preferably stone-ground
- ½ cup all-purpose flour
- ¼ cup granulated sugar
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- 1 large egg beaten
- ¾ cup buttermilk or whole milk
- 1 teaspoon vanilla extract
Instructions
- In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, salt, and cinnamon until well combined.
- In a separate bowl, whisk the beaten egg, buttermilk, and vanilla extract until smooth.
- Combine the wet ingredients with the dry ingredients, stirring gently until just incorporated. The batter should be thick but not lumpy.
- Heat the oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
- Using a cookie scoop or tablespoon, gently drop heaping spoonfuls of batter into the hot oil, taking care not to overcrowd the fryer.
- Fry the hush puppies for about 3-4 minutes, turning occasionally, until they are golden brown and crisp on the outside.
- Remove the cooked hush puppies with a slotted spoon and drain on paper towels.
- Serve warm, fresh, and enjoy.
Notes
- For a twist, try adding a dash of nutmeg or replace half of the buttermilk with apple cider for a fruitier note.
