Sweet Cherry Dumplings wrap tart, juicy cherries in a lightly spiced dough that's simmered until tender and finished with a simple sweet sauce. The combination of soft dough and bright cherry filling makes them a satisfying dessert or snack any time of day. From start to finish, they come together in about 45 minutes.
In a mixing bowl, combine flour, baking powder, and salt. Add sugar and mix well.
In a separate bowl, whisk together milk, egg, and melted butter. Gradually incorporate the wet ingredients into the dry, mixing until a smooth dough forms. Knead lightly on a floured surface, adding flour as needed to prevent sticking.
Roll the dough out to a thickness of about 1/8 inch and cut into 3-inch circles. Place a couple of cherry halves in the center of each circle before folding over and sealing the edges with a fork.
Bring a saucepan of water to a gentle boil. Place the dumplings in the water, cooking for about 5-7 minutes, or until they float to the surface with a tender texture.
In a small saucepan, combine the remaining cherries, sugar, lemon juice, and vanilla extract. Simmer until the cherries have softened and the mixture reduces, about 10-15 minutes.
Drain the dumplings and serve warm, topped with the cherry sauce for an indulgent finish.

Notes
For an added kick, try adding a dash of cinnamon or nutmeg to the dough.
If fresh cherries are out of season, frozen cherries work as a substitute.
