This baked chocolate pudding uses a generous amount of cocoa and melted dark chocolate to build a deep, full-bodied flavor throughout. The texture is dense and smooth, closer to a steamed British pudding than a chilled American-style pudding cup. From mixing bowl to table, it takes roughly 1 hour including baking and a short resting time.
In a medium saucepan, whisk together granulated sugar, cocoa powder, cornstarch, and salt. This dry mix is the base to ensure the pudding thickens to perfection.
Gradually whisk in milk until the mixture is smooth. Place the saucepan over medium heat and continue stirring until the mixture thickens and begins to bubble, about 8-10 minutes. You should see the pudding coat the back of a spoon.
Remove from heat and add vanilla extract, butter, and chopped dark chocolate. Stir until the mixture is homogenous, and the chocolate is fully melted. The aroma should be rich and inviting.
