Place the sliced strawberries in a mixing bowl and sprinkle with granulated sugar. Stir gently and let sit for 5-10 minutes, allowing the strawberries to macerate and release their juices.
In a separate mixing bowl, whisk the chilled heavy cream until soft peaks form. You can use a hand mixer for ease.
Gently fold the elderflower cordial into the whipped cream, being careful not to deflate the mixture.
Layer the macerated strawberries and elderflower cream into serving glasses or bowls, finishing with a dollop of the cream on top.
