This delightful Strawberry Cream Roll Cake combines the classic elegance of a roulade with the refreshing sweetness of ripe strawberries and creamy mascarpone. Originating from European baking traditions, this cake offers a modern twist on the traditional Swiss Roll. Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper and set aside.
Separate the egg whites and yolks. In a clean bowl, whip egg whites with the electric mixer until soft peaks form. Gradually add in sugar and continue to whip until stiff peaks form.
In another bowl, gently beat the yolks with vanilla, then fold into the whipped egg whites carefully, trying not to deflate them.
Sift together flour, baking powder, and salt, then gently fold into the egg mixture. Pour the batter into the prepared tray, smoothing it out evenly.
Bake for 12-15 minutes or until the cake springs back when lightly touched. Once baked, turn the cake out onto a clean, damp kitchen towel, peeling away parchment paper and rolling it up with the towel. Let cool completely.
In a separate bowl, whip the cream until soft peaks form, then add mascarpone and powdered sugar and whip until smooth.
Unroll the cake, spread with the mascarpone cream, and add a layer of strawberries. Roll the cake back up gently without the towel.
Transfer the roll to a serving platter and chill for at least 30 minutes before serving.
