Sticky toffee pudding is a British classic built around a moist, date-sweetened sponge cake soaked in warm toffee sauce. The dates are simmered and blended into the batter, keeping the cake tender and giving the sauce something to cling to. From start to finish, expect about an hour, making it a solid choice for a weekend dessert.
Preheat your oven to 180°C (356°F). Grease a 20cm (8-inch) square baking dish with butter.
Prepare the dates: Place the chopped dates in a bowl and cover them with boiling water. Stir in the baking soda and let it sit for 10 minutes to soften. Mash slightly with a fork.
Cream the butter and sugar: In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy.
