Sourdough starter gives these fried donuts a mild tang and a slightly chewier crumb than a standard yeasted recipe. Plan for a few hours of rise time, but the hands-on work is minimal, and the finished donuts are light with a golden, crisp exterior.
In a mixing bowl, combine the active sourdough starter, warm milk, granulated sugar, melted butter, and egg. Mix until the ingredients are fully incorporated.
Gradually add the flour, salt, cinnamon, and vanilla extract. Knead using a dough hook until the dough is smooth and elastic, about 5–7 minutes.
Cover the dough with a damp cloth and let it rise in a warm area until doubled in size, approximately 2 hours.
Punch down the dough and roll it out on a floured surface to about 1/2 inch thickness. Use a donut cutter to cut out donuts.
Heat the vegetable oil in a deep fryer or heavy pot to 375°F (190°C). Fry the donuts in batches until golden brown, about 1–2 minutes per side. Drain on a cooling rack.
Dust the warm donuts with confectioners' sugar and serve.
