Instructions
Start by smoking the cream cheese. Place it in a smoker set to 250°F (121°C) for approx. 30 minutes, or use a smoking gun for a lighter touch of smokiness.
Once smoked, let the cream cheese cool. Preheat your oven to 325°F (163°C).
In a mixing bowl, beat the smoked cream cheese, sugar, and vanilla extract until smooth and creamy.
Add eggs one at a time, mixing on low speed until just combined. Avoid overmixing to prevent cracks.
Prepare a springform pan with parchment paper or cooking spray. Pour the cream cheese mixture into the pan.
Bake in the preheated oven for 50-60 minutes, or until the edges are set but the center still slightly jiggles.
While the cheesecake bakes, prepare the berry compote by simmering mixed berries and lemon juice in a small saucepan until thickened.
Allow the cheesecake to cool completely before serving, preferably refrigerating overnight to set.
