Simple Almond Biscotti are twice-baked until crisp and golden, with whole toasted almonds throughout and a clean vanilla flavor. The dough is shaped into a log, baked once, sliced, then returned to the oven to dry out — a process that takes about 50 minutes total. They pair well with coffee or tea and keep for up to two weeks in an airtight container.
1cupwhole almondslightly toasted and roughly chopped
Instructions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, combine the melted butter, eggs, and vanilla extract. Whisk until well blended.
Gradually add the wet ingredients to the dry ingredients, mixing just until combined.
Fold in the almonds using a spatula, ensuring an even distribution throughout the dough.
Transfer the dough to the prepared baking sheet, forming it into a log approximately 12 inches long and 3 inches wide. Flatten slightly with your hands for an even shape.
Bake for 30 to 35 minutes until the log is firm to the touch and golden brown. Allow to cool on the baking sheet for 10 minutes.
Reduce the oven temperature to 300°F (150°C). Using a serrated knife, slice the log diagonally into 1/2-inch thick slices.
Arrange the slices cut-side down on the baking sheet and bake for an additional 15 to 20 minutes until crisp, turning halfway through.

Lori’s Tips:
For a more intense almond flavor, consider adding a few drops of almond extract along with the vanilla.
If a nut allergy is a concern, substitute almonds with dried cranberries or chocolate chips for a different flavor profile.
